In my last blog entry, I described how business can improve its strength with the concept of "AntiFragility". In this piece I explore how bringing a craftsmanship approach to what you do can give you a robust advantage against the changing tide.
They are open ONLY Thursday to Sunday. Daily, their hours run 8 a.m. to 4 p.m., strictly.

They run out of their most popular items every day, often before noon. One day recently, I arrived early enough to not miss out on my favourite item only to learn that the chef was unhappy with how his croissants had turned out that day and... He trashed the whole batch! At first, I grimaced, but then smiled. Artisans think differently about things. They maximize the art knowing that a good paycheck will follow. Not vice versa. They have customers in order to be in business - they don't go into business in order to have customers.

At RPM Bakehouse, grains are an obsession. The flours used are selected for being both distinctive in flavour and noble in pedigree. To source these flours responsibly, RPM developed relationships with local farmers and millers who are proponents of diverse and resilient heritage grains that are sown and grown in Ontario. These flavourful wheats are featured in slow-fermented sourdough bread, crisp buttery pastries, and savoury delights.

RPM truly represents this corner of Niagara, using traditional techniques, inspired by regional ingredients that are seasonally grown and sourced from their own farm, and wines that are from their own estate and other exciting producers. With the kitchen's seasonal and ever-changing menu of regional ingredients, the RPM menu brings casual fare for breakfast & lunch ~ enjoy fresh plates from the garden, small bites & nice wine indoors or (seasonally) on their garden patio.
The bakery lineup, crafted from locally grown and milled heritage grains, changes regularly. You might find asparagus Danishes, buckwheat financiers, or wild garlic biscuits. For something heartier, grab a jambon beurre sandwich to-go or a picnic-ready plate with baguette and pâté.

I am positive there is more to it than that. His 27 layers of butter-laminated sweet dough are made with precision and passion.
